干煎龙蛎(sole meuniere)


具体做法:将洗干净的龙蛎用纸擦干, 然后再用一个鸡蛋涂匀后放入葱油锅中两面煎透, 而后倒入事先准备好的姜丝和蒜瓣及调料等(酱油,醋,盐,糖)即可食用. 注意事项:煎鱼翻面时用铲子顺着龙蛎的脊柱翻, 免得拦腰折断, 影响"卖像", 另外油要放到恰到好处.
